2 Tbsp fresh oregano, chopped (2 tsp dried)
1/2 tsp each sea salt and ground pepper
2 Tbsp extra virgin olive oil
1 cup sliced red bell pepper
1 bunch green onions, sliced
1/2 cup (4oz) crumbled Goat cheese
Pre-heat oven to 350F
Heat oil in a skillet over medium heat. Add peppers and cook, until tender, but not mushy.
In a separate bowl whisk together eggs, salt & pepper, oregano, 1/2 cup cheese and green onion. Add in the cooked peppers and stir to combine
Pour the mixture into a 9″ pie plate. Sprinkle with remaining cheese
Bake for approx. 30 minutes or until eggs are cooked, puffed and the top is golden brown.
