INGREDIENTS
2 (5oz) Grilled chicken breast, chopped
2 cups fresh spinach
1/2 avocado
2 tsp Dijon mustard
1/2 cup red grapes, halved
2/3 cup chopped apple
2 tbsp unsweetened dried cranberries
4 tbsp walnuts
2 tbsp apple cider vinegar
1 tsp tarragon
Sea salt & pepper to taste
DIRECTIONS
In a bowl mash up the avocado and mix in the mustard, vinegar and tarragon. Mix in the cranberries, grapes, apples and walnuts.
Cut the chicken in to 1″ cubes or strips.
Layer the spinach, avocado mixture and chicken in a salad bowl or plate and serve cold.
