2 Tbsp pumpkin seeds
1 + 1 Tbsp coconut oil
Zest of half a lime
Juice of half a lime
1/4 tsp chili powder
4 (4oz) salmon fillets
1/2 tsp each sea salt and pepper
Toast seeds in a dry pan over medium heat until just brown and fragrant.
Combine toasted seeds in a small bowl with 1 Tbsp coconut oil, lime zest, lime juice and chili powder. (for a smooth sauce puree all in a food processor).
Grease a skillet with 1 Tbsp Coconut oil and place over medium heat.
Sprinkle salmon with salt and pepper, add to the pan and cook until just cooked through. Remove the pan from the heat.
Add the seed & lime mixture to the hot pan. Stir to combine. Serve the salmon topped with warm sauce.
