Greek Quinoa Salad

Quinoa is a seed that is commonly mistaken for a grain. This superfood has a long list of perks including being rich in essential vitamins, high in protein and low in fat. It has been known to aid in the maintenance of proper heart function, reduce symptoms of migraines and promote healthy digestion. And these are just a few of it’s benefits! This is why we incorporated quinoa into this classic greek salad recipe ?

 

NUTRITIONAL INFORMATION

Nutritional Value Per serving; Calories 368, Fat 10g, Protein 22g, Carbs 50g

 

INGREDIENTS

1 cup unsweetened Almond milk

1/2 cup water

3/4 tsp dried oregano

1/4 tsp Fresh ground pepper

1 cup quinoa, rinsed

Lemon Zest (from 1 lemon)

2 tbsp fresh squeezed lemon juice

2 medium tomatoes, chopped

1 yellow bell pepper, chopped

1 English cucumber, chopped

1/2 cup diced red onion

1 cup drained, rinsed, canned red beans

3/4 cup crumbled light Feta cheese

DIRECTIONS

In a deep saucepan, combine milk, water, oregano and pepper. Bring to boil over medium heat.

Stir in quinoa. Reduce heat to low, cover and simmer for 20 minutes. Let stand covered 5 minutes until all the liquid is absorbed. Transfer to bowl. Stir in lemon zest and let cool.

Stir in remaining ingredients.

Serve or refrigerate up to one day.
