2 (5oz) boneless, skinless chicken breast
1/2 tsp pepper
1/2 tsp paprika
1/2 tsp sea salt
2 whole eggs
1/4 cup water
1/2 cup sprouted grain, or gluten free, bread crumbs
1/2 cup unsweetened shredded coconut
Preheat oven to 350F. Cut the chicken in to 1/2 inch strips.
In a large bowl mix together the salt, pepper , paprika, egg and water.
In a separate bowl mix together the bread crumbs and coconut.
Dip the chicken strips in the egg mixture until coated completely allowing any access to drip off. Then place the strip in the breadcrumb mixture and coat evenly.
Place the strips on a lightly greased backing pan and bake in the oven until cooked through and golden brown. (about 15-20min).
