This black bean quesadilla recipe is a huge time saver. The simple list of ingredients comes packed full of flavour and hits the spot whenever I’m craving my favourite Mexican dish. This meal is great for dinners, lunches or even cold as an on-the-go snack. Full of protein and healthy fats, this Quesadilla makes for a well balanced, clean and delicious meal. Muy Bueno!
Nutritional value per serving (1 quesadilla and ¼ avocado): Calories 377, Fat 16g fat, Carbs 46g, Protein 13g
1 (14oz) can black beans, rinsed
1/2 cup shredded mozzarella cheese
1/2 cup fresh salsa, divided
4 sprouted grain or gluten free wraps
2 tsp extra virgin olive oil
1 ripe avocado, diced
Combine beans, cheese and 1/4 cup salsa in a medium bowl.
Spread 1/2 cup filling on half of each wrap. Fold wrap in half.
Heat half the oil in a skillet over medium heat and brown each of the quesadillas on both sides. (You will likely only be able to fit 2 at a time, so heat remaining oil and repeat).
Serve with avocado slices and the remaining salsa.
