INGREDIENTS
1 (14oz) can black beans, rinsed
1/2 cup shredded mozzarella cheese
1/2 cup fresh salsa, divided
4 sprouted grain or gluten free wraps
2 tsp extra virgin olive oil
1 ripe avocado, diced
DIRECTIONS
Combine beans, cheese and 1/4 cup salsa in a medium bowl.
Spread 1/2 cup filling on half of each wrap. Fold wrap in half.
Heat half the oil in a skillet over medium heat and brown each of the quesadillas on both sides. (You will likely only be able to fit 2 at a time, so heat remaining oil and repeat).
Serve with avocado slices and the remaining salsa.
