Cocoa Avocado Pudding

I hate wasting food and it seems like avocados are the hardest thing to use up in a hurry. I swear, one day they are hard as a rock and the next day they are brown mush! If you’ve got some laying around that need to be used up my two go-to recipes are either guacamole or this cocoa avocado pudding!

The cocoa and natural sweetness added in this recipe mask the avocado taste while creating a rich, creamy treat that is a great alternative to your typical chocolate pudding.

INGREDIENTS

4 ripe avocados
1/4 cup coconut milk
1/4 cup cocoa powder
2 tsp pure vanilla extract

1/4 cup pure maple syrup
2 oz dark chocolate chips
1/4 tsp cinnamon
1/4 tsp sea salt

DIRECTIONS

Cut the avocados in half, remove the pit and scoop out the flesh. Combine the avocados, milk, cocoa powder and vanilla in a blender or food processor. Blend until fully combined and avocados are smooth (about 30-45 sec.)

In a small sauce pan heat chocolate chips over low heat stirring frequently until chips become soft. Remove from heat and stir in maple syrup. Add the chocolate mixture to the blender and continue to blend until well combined. For a thinner consistency add a tablespoon of milk at a time or if you prefer a thicker pudding you can add 1/2 of a ripe banana.

Pour the pudding into a sealable container and place in the fridge. Let cool for at least 30 minutes and serve chilled!
