Ok, I must be honest with you, I am not a fan of olives- I keep trying them and I keep spitting them out. However, almost everyone in my family, and a number of my clients, are big fans which is why this recipe was introduced! It is simple to make and packed full of flavor. For all you olive lovers out there this olive chicken dish is sure to hit the spot!

INGREDIENTS
1 can (14 oz) diced tomatoes
3 cups fresh spinach, rough chop
1/3 cup halved green olives
1 Tbsp capers, rinsed
1 tsp each dried oregano and basil (or 1 Tbsp fresh)
Pinch chili flakes
4 (4oz) Boneless, skinless chicken breasts
Salt and pepper
1 Tbsp extra virgin olive oil
DIRECTIONS
Combine tomatoes, spinach, olives, capers and chili flakes in a bowl.
Sprinkle both sides of chicken with salt and pepper.
Heat oil in a large skillet over medium-high heat.
Brown all sides of the chicken then top with the tomato mixture. Reduce heat to medium, cover and cook at a simmer until cooked through (about 20-30 mins). Serve over whole grains or fresh greens.
