Blackberry Balsamic Dressing

I’ve been noticing a large selection of fresh blackberries at a great price and decided to add some into the mix this week! Here are just a few reasons why snagging some of these seasonal berries may be beneficial to your health plus – an amazing Blackberry Balsamic dressing that is perfect on a fresh summer salad.

They Are Low In Calories: Coming in at just 37 calories per half cup, blackberries are a great way to satisfy your sweet tooth without throwing you off your daily caloric goals.

They Are High In Fiber: The fiber in blackberries may help control cholesterol and will keep you regular.

They Promote Good Bone Health: Blackberries contain both Vitamin K and magnesium. Together these nutrients play a part in creating strong healthy bones.

Blackberry Balsamic Dressing

Makes 4 servings

1/2 cup ripe blackberries
1/2 Tbsp Agave syrup
1 Tbsp balsamic vinegar
1 Tbsp olive oil
1 Tbsp fresh mint, chopped
1/4 tsp sea salt
1/2 tsp fresh ground pepper

Combine all ingredients in a blender or food processor and blend until smooth! Or – mash the berries and mix by hand if you prefer a thicker, chunkier dressing!
