Blackberry Balsamic Dressing

Makes 4 servings

1/2 cup ripe blackberries
1/2 Tbsp Agave syrup
1 Tbsp balsamic vinegar
1 Tbsp olive oil
1 Tbsp fresh mint, chopped
1/4 tsp sea salt
1/2 tsp fresh ground pepper

Combine all ingredients in a blender or food processor and blend until smooth! Or – mash the berries and mix by hand if you prefer a thicker, chunkier dressing!
