The sugar cookies and fudge are gone and it’s back to clean eating for me! Even with a clean diet you have to make room for healthy snacks and treats – like these chickpea cookies. Simple, healthy ingredients make these treats delicious and full of nutrients!

Makes 16

Nutritional value per serving; Calories 102, Fat 4g, Protein 4g, Carbs 15g


1-15oz can chickpeas, drained and rinsed
8 large medjool dates, pitted
1/3 cup unsweetened apple sauce
1/2 cup natural peanut butter
1/4 cup rolled oats
1 tbsp ground flaxseed
1 tbsp hemp hearts
2 tsp vanilla extract
1 tsp baking powder
¼ tsp sea salt
2 tbsp chopped walnuts


Preheat oven to 350F.

In a food processor add all the ingredients except the chopped walnuts. Process for a full two minutes, or until batter is very smooth. You may need to scrape down the sides as you go.

Line a baking sheet with parchment paper and spoon the batter onto the sheet in 16 equal balls. Press down each ball with a fork and then sprinkle the tops with walnuts.

Bake for approx. 15-17 minutes, or until lightly browned. Enjoy! 🙂
