Maui is hands down one of my favourite vacation spots. I don’t know what I love more, the scenery, the weather, the people or the food! I do know, however, that there is no better flavour combo than coconut and pineapple. Add in some of my favourite maui peanut butter and you’ve got pure magic. This Maui inspired homemade ice cream is a must if you are looking for a tropical sweet treat that won’t throw you off your health and nutrition goals.
Nutritional value per popsicle: Calories 165, Fat 12g, Protein 4g, Carbs 11g
1/4 cup coconut milk
2 Tbsp fresh squeezed orange juice
1 cup frozen pineapple chunks
1 cup frozen ripe banana
1/4 cup coconut peanut butter ( I use North Shore Goodies Coconut Peanut Butter yummmm)
Macadamia nut pieces – for topping
Combine the milk, o.j, pineapple and banana in a Vitamix or other powerful blender. Cover and blend using the frozen desert setting or until you achieve a thick, creamy texture. Use the tamper to help the blending process along if needed. Transfer the mixture to a freezable dish with a lid. Place in freezer for 30 – 45 minutes or until you achieve an “ice cream” like consistency. Scoop out the ice cream and drizzle with warmed peanut butter ( I microwave mine at 15 second intervals – be careful it heats up quickly!) Top with macadamia nuts and serve immediately. Aaaaaaamazing. I would recommend storing leftovers for no more than a day or two so make sure you share with you friends 😉
