This Shrimp and mixed bean salad recipe is one of my favourites! It’s so easy to put together and makes for a great dish on it’s own or can be the perfect side dish at your next bbq. It’s loaded with protein and flavour. Try it out and let me know what you think 🙂
Nutritional Value per serving; Calories 206, Fat 3g, Protein 27g, Carbs 24g
1 lb cooked shrimp, peeled and deveined
1 19oz can mixed bean medley
2 large tomatoes, chopped
1/2 cup sweet onion, chopped
1/2 cup Fresh cilantro, chopped
1/4 cup salsa
1 1/2 tbsp fresh squeezed lime juice
zest of 1 lime
1/2 tbsp extra Virgin Olive oil
1/2 tbsp chili powder
1/4 tbsp ground cumin
1/4 tbsp paprika
Chop tomatoes, onion and cilantro.
Combine with all other ingredients in a large bowl and mix well.
