Protein popsicles are a great way to cool down, kick sugar cravings and get a dose of protein at the same time. This easy recipe uses simple ingredients that are full of nutrients.
Makes 4-6 popsicles (depending on molds)
Nutritional value per popsicle: Calories 113, Fat 2g, Protein 10g, Carbs 15g
2 cups loosely packed spinach leaves
1/2 cup lite coconut milk
1/2 cup unsweetened coconut water
1 scoop vanilla protein powder
1/2 ripe banana
1 cup fresh or frozen berries
Combine all ingredients in a blender and blend until smooth. Pour mixture into popsicle molds. Freeze until solid (approx 1 hour or more) If they are tricky to get out, just run the mold under warm water until they slide out. Enjoy!
