Valentine’s Day Dinner for Two

Stay in this Valentine’s day and heat up the kitchen with your Romeo or Juliet. This dinner for two is rich in nutrients and heart healthy foods. The recipes are designed for four people which will give you leftovers for next days lunch. The desert is meant for sharing- so two forks are needed!

Starter:
Easy Tomato Soup

Main:
Salmon with Pumpkin Seed Butter
Serve with fresh mixed greens and dressing.

Fiesta in Your Mouth Dressing

(makes 4-6 servings)

1/2 cup 0% plain greek yogurt
1 1/2 tbsp onion, minced
1/2 tbsp fresh lime juice
1 clove garlic, minced
1/2 tsp ground cumin
1/2 tsp chili powder
1/4 tsp Sea salt

In a small bowl whisk together all ingredients or combine in a blender and blend until smooth.
Chill before serving. Store leftovers covered in refrigerator

Desert:
Vanilla Cake with Fresh Berries

1 Lime
1 small container Fresh berries
1 sweet onion
Fresh Basil

Dry Goods:
1 tbsp pumpkin seeds (Natural, unsalted)
1 can light coconut milk
1 (28oz) can diced tomatoes

Dairy case:
Unsweetened almond milk
6 eggs
Organic whipping cream

Deli:
2 (4oz) salmon fillets

Spices & Pantry Staples:
chili powder
sea salt
fresh ground pepper
chili flakes (optional)
cinnamon
extra virgin olive oil
coconut oil
coconut flour
baking powder
vanilla extract
raw agave
