Carrots are high in beta-carotene and antioxidants making this garden vegetable a nutritious side dish. Add a little honey for a hint of sweetness in this glazed carrots recipe!

1/2 pound carrots (3-4 medium), peeled and chopped
1 Tbsp coconut oil
1 Tbsp raw honey
1/2 Tbsp lemon juice
1/4 cup flat leaf parsley, chopped
Sea salt and fresh ground pepper, to taste
Fill a large pot with water and bring to a boil. add chopped carrots and boil until just tender, drain.
Heat oil in a saucepan over medium heat. Whisk in honey, lemon juice, and a pinch of salt. Add in carrots and stir to coat. Saute in pan for approx. 5 minutes or until carrots begin to brown slightly.
Remove from heath and sprinkle with salt and pepper. Garnish with parsley and serve!
