Ahh pumpkin season. Who doesn’t love a good pumpkin treat during the fall season? Here’s a way to enjoy this festive flavor, avoid any unnatural ingredients and get a dose of protein at the same time. Win. Win. Win. Try out these protein pumpkin muffins for breakfast or post workout!
Make 12 Muffins
Nutritional value per muffin; Calories 122 , Fat 6g, Protein 8g, Carbs 10g
1 large egg
1/4 cup egg whites
1/4 cup pure pumpkin puree
1 large ripe banana
1/2 cup all-natural peanut butter
1/4 cup pure maple syrup
2 scoops vanilla protein powder
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp pumpkin pie spice
1/2 tsp sea salt
1 Tbsp rolled oats
1 tsp cinnamon
Preheat oven to 350F. Oil a 12 cup muffin tin or line with non-stick cups.
Combine egg, egg white, pumpkin, banana, peanut butter, and maple syrup in blender. Cover and blend for 30 seconds
Add in protein powder, baking powder,baking soda, pumpkin pie spice and salt. Cover and blend until smooth.
In a separate small bowl, stir together cinnamon and rolled oats.
Pour batter evenly into prepared muffin tin. Sprinkle tops with cinnamon-oats mixture
Place in oven and bake approx. 20-25 minutes, or until golden brown and tester inserted into the center comes out clean.
Transfer muffins to rack, let cool and enjoy!
