I’m a sucker for Mexican food and a warm bowl of soup so, on a chili winter evening, this recipe hits the spot. Full of spice and flavor, and super easy to make, this Fiesta Black Bean soup is one of my favorites!

1 sweet onion, chopped
1 tbsp cumin
4 garlic cloves, minced
2 tbsp extra virgin olive oil
3 1/2 cups low sodium chicken broth
3 tomatoes, chopped
1 can (14oz) black beens, drained and rinsed
1 1/2 tbsp chili powder
1 tbsp fresh cilantro
*optional: Top with a tbsp of plain greek yogurt, light cheese and/or organic tortilla chip pieces!
In a pot, heat olive oil over medium heat. Sauté onion, cumin, and garlic cloves until tender.
Add chicken broth, tomatoes, black beans, and chili powder. Bring to a boil, cover, and simmer 5-10 minutes. Garnish with fresh cilantro and serve.
