Turkey lettuce wraps make a nice light meal or a great appetizer to share. This recipe uses some of my favorite flavors and ingredients to create an asian inspired taste and the perfect amount of crunch! Try them out and let me know what you think 🙂

16 large lettuce leaves or take an ice burg head, cut in half and peel a layer as you need them
1 lb extra lean ground turkey
2 tsp coconut oil
1 sweet onion, chopped
2 cloves garlic, minced
1 Tbsp soy sauce or tamari
1/4 cup hoisin sauce
1 Tbsp rice wine vinegar
1 (8 oz) can water chestnuts, drained and finely chopped
1 bunch green onions, sliced
1 tsp sesame oil
2 Tbsp sesame seeds
Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
In a medium skillet over medium high heat, brown the turkey in coconut oil, stirring often. Set aside. Cook the onion in the same pan, stirring frequently. Add the garlic, soy sauce, hoisin sauce and vinegar, to the onions, and stir.
Stir in chopped water chestnuts, green onions, sesame oil, and cooked turkey; continue cooking until the onions just begin to wilt, about 2 minutes. Sprinkle with sesame seeds.
To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Wrap the lettuce around the meat like a burrito, and enjoy.
