I was in need of a sweet baked treat this weekend so I turned to these Chickpea Blondies! These tasty little squares are gluten free, dairy free and made with all natural ingredients. They are also high in fibre and protein. Simple ingredients with loads of flavour! I may or may not have ate one for breakfast this morning…… what can I say, they go great with coffee 🙂
Makes 16 squares
Nutritional value per serving: Calories 112, Fat 5g, Protein 4g, Carbs 13g
1 whole egg
2 tsp pure vanilla extract
1/3 cup pure maple syrup
1/2 cup all natural peanut butter
1 (15oz) can chickpeas, drained & rinsed
1/2 tsp baking powder
1/2 tsp himalayan salt
1/4 cup dark chocolate or carob chips
Pre heat oven to 350F
Combine all ingredients, except the chocolate chips, in your Vitamix or food processor. Blend until smooth and well combined
Spray an 8×8 baking dish with cooking spray or lightly coat with oil.
Pour the mixture into the dish and spread out evenly. Sprinkle with chocolate chips.
Bake in oven for approx. 20 minutes or until cooked through. Let cool and then cut into 16 equal squares.
