This recipe was a happy accident – I love when that happens 🙂 I had some very ripe bananas to use up so I threw a few ingredients together and voila! I picked up the coconut chips at a health food expo a while back and I have been putting them on everything! Oatmeal, yogurt, in my shakes – they add the perfect sweet crunch and are a great source of fiber. Give these Banana Coconut Clusters a try and let me know what you think!
Nutrition per serving: Calorie 72, Fat 3g, Protein 2g, Carbs 10g
2 ripe medium bananas
1 cup rolled oats
1/2 cup coconut chips ( I used Rockwell’s)
1 tsp baking powder
1 whole egg
1 tbsp coconut oil
Preheat oven to 350F.
In a large bowl, combine all ingredients. Use you hands to mash up the banana and mix everything together. Line a baking sheet with parchment paper and then drop of spoonful of the mixture at a time onto the sheet. (Makes about 12 clusters) Place sheet in preheated oven and bake for approx. 20 – 25 minutes or until edges start to brown. Remove from oven, let cool and then enjoy!
