Carrot Ginger Soup

I’m back in Calgary spending some time with my family and it appears that winter is officially here. After a weekend of eating Blue’s Clues birthday cake at my nephews bday and being surrounded with runny nosed toddlers I had a need for something hot and full of flu-fighting nutrients. This carrot ginger soup is the perfect winter meal with bonus immunity boosting ingredients!

Ingredients

1 tbsp virgin coconut oil

3/4 cups sweet onion, roughly chopped

1/2 tbsp fresh grated ginger

1/2 tsp cinnamon

1/4 tsp chili powder

3 cups carrots, diced

1/2 cup 100% pure orange juice

1/2 cup light coconut milk

1 1/2 cups unsweetened almond milk

Sea salt & fresh ground pepper, to taste

 

Directions

In a large sauce pan boil the carrots until soft. Meanwhile, add the remaining ingredients to your Vitamix.

Once carrots are soft remove them from heat, drain and add to the Vitamix. Secure the lid and select the hot soup pre-set. Press start and use the tamper to push ingredients towards the blades. Let the Vitamix run through the full cycle until it stops on it’s own (approx 6 minutes)

Once stopped, pour soup into a serving dish. It will be hot and ready to serve!
