These lettuce wraps are full of flavour and nutrients and make a great lunch or sharing appetizer for your next dinner party. Try mixing it up with different types of meat or seafood or go vegetarian!

2 tbsp coconut oil
½ cup shallots, diced
½ cup green onions, chopped
½ cup red bell pepper, diced
1/4 cup corn kernels
½ cup carrots, shredded
2 cloves garlic, minced
1lb extra lean ground turkey, beef or veggie ground
2 tsp chili powder
2 tbsp fresh cilantro
Sea salt and Pepper to taste
large Chard leaves (or lettuce leaves) , washed and dried
Heat 1 tbsp of coconut oil in a large skillet on medium heat.
Add the shallots, green onions, bell pepper, corn and carrots and cook until softened. Mix in garlic and cook for an additional minute.
Meanwhile, heat another large skillet on medium heat and add 1 tbsp of coconut oil. Crumble the turkey into the pan and sprinkle with sea salt and chilli powder. Cook the turkey until it is browned on both sides and cooked through
Stir in vegetables and sprinkle with more sea salt,chilli powder and pepper to taste. Remove from heat. Stir in cilantro.
Place the turkey and vegetable mixture into Chard or lettuce leaves and serve. Top with salsa or guacamole
