Thanksgiving is filled with friends, family and food! Now I’m sure there won’t be any pumpkin pie left over but – if you end up with plenty of turkey leftovers this south coast open faced club is a great way to use them up!

4 (4oz) cooked turkey or chicken breast
4 slices bread, lightly toasted
1 avocado, sliced
1 cup sliced mushrooms
1/3 cup sliced almonds
1 tomato, sliced
2 tbsp salsa
2oz shredded light mozzarella
Sea salt and pepper, to taste
Preheat the oven broiler.
In a small skillet, toast the almonds over medium heat until golden brown. Remove from heat and set aside.
Lay the toasted bread out on a baking sheet. Spread each piece of bread with a layer of salsa.
On each slice of bread layer 4oz of the cooked turkey, avocado, mushrooms, almonds, and tomato slices.
Sprinkle each with cheese.
Broil the open-face sandwiches until the cheese melts and begins to bubble, about 2 minutes. Season with salt and pepper as desired.
