If you have a dairy allergy or are trying to cut back on your dairy intake – or you just love pancakes – this recipe is for you! These dairy free pancakes come out thick and fluffy and full of flavour. Top with a seasonal berry or fresh fruit of choice.

1 1/2 cups oat flour (make your own by blending oatmeal into a fine powder)
2 scoops diary-free vanilla protein powder
1 tsp baking powder
1 tsp cinnamon
1 tsp pure vanilla extract
1 cup almond, soy or rice milk
1/3 cup egg whites
2 tsp coconut oil
Fresh strawberries (or berry of choice)
Blend together all ingredients to create a smooth, thick consistency. Heat the coconut oil in a skillet over medium heat. Pour 1/4 of the batter into the hot skillet at a time. Cook until batter begins to bubble and then flip. Continue to cook until the pancake is golden brown on both sides. Remove from pan and top with fresh berries!
