1 cup unsalted almond slivers
2 garlic clove, minced
1 tsp sea salt
2 tbsp extra-virgin olive oil
4 (4oz) boneless, skinless chicken breasts
4 cup Fresh Spinach
Pre-heat oven to 425F
Combine almonds, garlic, salt and oil in a food processor and blend in to a paste. Coat chicken breasts with the paste and place on a lightly greased baking sheet.
Roast until cooked through and juices run clear. Approx. 15-20 minutes.
Slice and serve on top of 1 cup of fresh baby spinach and drizzle with fresh squeezed lemon.
