Confession-I have a serious weakness for pizza. However, I can’t eat it every night like I used to as a teenager- my skinny jeans just won’t allow it. Pizza can actually be a very nutritious meal and I have found ways to easily modify it so I can incorporate it into my healthy, clean eating meal plan.
One of the largest skinny-jean-busting culprits tends to be the crust. Store bought versions are usually loaded with calories, carbs and sodium- not to mention all the other nasty additives and preservatives. This cleaned up DIY pizza crust recipe is an easy to make, delicious, low calorie option so you don’t have to say goodbye to one of your comfort food fav’s.
Makes 2- 8”crusts
1-1/4 cup spelt flour
¼ cup ground flax seeds
½ cup water
2 tbsp extra virgin olive oil
1 tsp raw honey
¼ tsp sea salt
Preheat oven to 375F
Line a 8″ pizza pan with parchment paper. *If you like a crispy crust bake on a pizza stone
Mix flour, flax, and salt in large bowl and set aside.
In a separate bowl combine water, oil, honey and salt-combine well
Combine the wet mixture into the dry mixture with a fork until it forms a dough, then knead with your hands for about 2-3 minutes.
Use a rolling pin to evenly flatten out the dough and press it with your fingers into the pizza pan ensuring it is spread evenly to each edges. Prick the surface with a fork.
Bake for approx. 10 minutes or until the center is fully cooked.
