Cinnamon Chocolate PB French Toast

Believe it or not this mouth-watering breakfast is low in calories and fat and high in protein! Who said clean eating had to be boring? When eggs and toast start to lose their pizzaz switch it up with this simple, wholesome french toast recipe. Top with your favourite fresh fruits and the irresistible banana cream topping! Serves 2

Nutritional value per serving: Calories 295, Fat 9.5g, Protein 25g, Carbs 28g

 

Ingredients

4 slices sprouted grain or gluten free bread

4 egg whites

1 tsp cinnamon

2 tbsp unsweetened almond milk

2 tbsp natural peanut butter

1-2 tsp cocoa powder

2 tbsp coconut oil

Vanilla Banana Cream Topping

1/3 cup non fat cottage cheese

1/2 tsp pure vanilla extract

1/2 scoop vanilla protein powder

1/2 ripe banana, mashed

 

Directions

For Vanilla Banana Cream Topping:

Blend all ingredients together and put in fridge to cool and thicken. Serve on top of French toast.

 

For French Toast:

Combine eggs, cinnamon, almond milk, peanut butter and cocoa in a large bowl and mix well. Dip the bread in the mixture coating both sides generously.

Place the coated bread in a pre-heated pan greased with coconut oil on medium heat. Fry until golden brown on both sides.

Serve with Vanilla Banana Cream topping!
