Lactose Free Banana Pancakes

2 1/4 cups oat flour

3 scoops protein powder

1 tsp cinnamon

1 tsp baking powder

1 tsp vanilla

1 cup unsweetened almond milk

2 ripe bananas, mashed

1/2 cup egg whites



Blend together all ingredients. If the batter is too thick add another 1/4-1/2 cup almond milk until you reach your desired consistency.

Pour batter onto a pre-heated non-stick skillet over medium heat. Cook until bubbles start to form on top and flip. Cook until both sides are golden brown and pancake is cooked through.

*Optional – top with soy or dairy free yogurt and fresh banana slices.
