4 tsp extra virgin olive oil, divided
2 cups zucchini, diced
1 cup sweet onion, chopped
1 cup grape tomatoes, halved
1/2 cup fresh basil, ribboned
1/2 tsp sea salt
Freshly ground pepper, to taste
6 egg whites
1 cup crumbled goat cheese
Preheat oven to 350F.
Grease the bottom of your bakeware with olive oil.
Prepare vegetables and layer evenly on the bottom of the dish.
Whisk your eggs with salt and pepper. Pour the eggs over top of the veggies distributing evenly.
Sprinkle with basil and goat cheese.
Place in oven and bake for 20-30 minutes or until eggs are cooked through. Let cool slightly and divide into 4 servings.
