8 egg whites
1lb extra lean ground turkey
2 cups fresh spinach
2 tomatoes, chopped
1 clove garlic, finely chopped
1 tbsp extra virgin olive oil
Sea salt & pepper to taste
Cook turkey in a skillet over medium heat until cooked all the way through. Drain access juices and set aside.
In a small bowl whisk the eggs with salt and pepper. Pour in to a pre-greased skillet and scramble the egg whites over medium heat until dry. Add the eggs to the cooked turkey.
Sauté tomatoes, spinach and garlic with olive oil until tender.
Combine all ingredients into one large skillet. Mix thoroughly. Season with salt & pepper as desired.
