Turkey, Onion & Mushroom Egg Muffins

Serves 6 (makes 12 muffins)

Ingredients

8oz extra lean ground turkey

1 1/2 cups egg whites

2 eggs

1/4 cup sweet onion, diced

1/4 cup mushrooms, chopped

Sea salt & pepper, to taste

 

Directions

Preheat oven to 375°F. Coat a 12-muffin tin with a little oil to prevent sticking.

Pre-cook the ground turkey in a frying pan over medium heat until cooked through and lightly browned

Fill each muffin tin 2/3 full with a mixture of turkey, mushroom and onions.

Whisk eggs and seasonings in a large mixing bowl. Fill the remainder of each tin with the egg mixture.

Bake 30 minutes or until muffins have risen and are slightly browned. *Optional- top with shredded cheese and/or salsa if desired.
