1 lb extra lean ground turkey
1 sweet onion, chopped
1 tbsp extra virgin olive oil
2 (14oz) cans white kidney beans
1 (16oz) jar salsa
1 3/4 cup low sodium chicken broth
1 1/2 tsp cumin
In a large pot on medium-high heat sauté turkey and onion in olive oil until cooked through; drain fat.
Add both cans of beans, salsa, chicken broth, cumin. Stir to combine.
Simmer, covered for 15 minutes.
