Spinach and Tomato Egg Bake Recipe

This spinach, tomato & Feta Bake is full of vitamins and nutrients – a perfect “Popeye-approved” breakfast to start the day.

1 large sweet potato, sliced

6 whole eggs

8 Egg whites

2 cloves garlic, minced

10 oz Fresh Spinach

1 sweet onion, chopped

2 tomatoes, diced

Fresh ground pepper to taste

1 tbsp Paprika

½ cup crumbled light feta cheese



Preheat oven to 400F

Grease the bottom of your bakeware, place potato slices in a single layer to cover bottom

Chop and prepare your vegetables & whisk your eggs together with the minced garlic

Layer all chopped veggies and spinach on top of potato slices.

Pour the eggs over top, distributing evenly. Sprinkle with pepper and paprika. Crumble feta cheese over top.

Bake for 30 minutes or until eggs are cooked through and cheese is melted.
