2 cups Spinach, chopped
2 green onions, chopped
1 tbsp extra virgin olive oil
4 egg whites
Hot sauce; to taste
Sea salt & pepper; to taste
2oz Light parmesan cheese, grated
In a medium skillet, sauté spinach and onion with oil for 1 minute or until spinach begins to wilt.
In a small bowl, beat eggs with a dash of hot sauce and salt & pepper; add to skillet.
Scramble egg mixture with spinach and onion and cook until egg is dry and cooked through. Sprinkle with parmesan; cook 15 to 30 seconds more until cheese melts.
