PB Breakfast Muffins Recipe

2 scoops vanilla protein powder

8 egg whites

2 Tbsp natural peanut butter

1/2 cup unsweetened almond milk

1/4 cup unsweetened apple sauce

1 cup rolled oats or quinoa flakes

2 tsp baking powder

2 tbsp coconut flour (whole wheat or almond flour will work too)



Preheat the oven to 375F

Combine all ingredients in a blender to form a thick smooth batter. Add water by the tsp if needed to perfect the consistency.

Pour the batter in to a pre-greased muffin tin and bake for approx. 15 min or until cooked through. Remove from oven and let cool slightly before serving.

*optional- top with a tsp of natural peanut butter and shredded coconut, unsweetened berry jam or raw honey!
