1 large (28oz) can diced tomatoes with liquid
1 sweet onion chopped
1 Tbsp extra virgin olive oil
Handful of chopped basil
Sea salt and pepper, to taste
1/2 cup room temperature almond milk (optional if you prefer a creamy soup)
Chili flakes if you like spice
Heat oil on medium heat. Add onions and cook until soft.
Add can of tomatoes, salt and pepper (and chili if you are using) and heat thoroughly. Remove from heat.
Add basil and whisk in milk (ensure the soup is not at a boil when you add milk)
You can serve it chunky or puree it smooth. Serve hot!
