1 1/2 cup Non fat Cottage cheese
2 cups Rolled oats
6 whole eggs
6 egg whites
1 cup unsweetened shredded coconut
4tbsp Lime Zest (2 limes)
Pre-heat your waffle maker. Combine all ingredients and blend until you get a thick, smooth consistency.
Coat the waffle iron with olive oil or a spray and pour 1/3 of the batter on to the heated iron. Cook until golden brown on both sides and repeat to make 3 Large waffles.
