Ingredients
1 cup sprouted grain or gluten free bread crumbs
1 tbsp almond flour
1/2 tsp paprika
1/2 tsp pepper
1/2 tsp sea salt
1 tbsp extra virgin olive oil
1 whole egg
2 egg whites
4 (4oz) fresh tilapia fillets- or other white fish of choice
Directions
Preheat the oven to 450°F.
Coat a baking sheet with 1 tablespoon of olive oil.
Cut the fish into approximately 4- by 2-inch pieces.
Whisk the egg in a shallow dish.
In another shallow dish, stir together the breadcrumbs, parsley, paprika, flour, salt, and pepper.
Dip each piece of fish into the egg and turn to coat. Remove, let the excess drip off, then place in the breadcrumb mixture, and turn to coat.
Place the fish pieces on the prepared baking sheet. Back approx 15minutes until the fish flakes easily with a fork. Serve with fresh lemon wedges and veggies on the side.
