1 tbsp Coconut oil
3 cups rolled oats
3 medium bananas
2 tbsp baking powder
3 tsp cinnamon
3 egg whites
1 1/2 cups non fat cottage cheese
3/4 cup unsweetened Almond milk
1 cup Fresh Blueberries
Place all ingredients (except blueberries) in a blender and blend until completely smooth, about 30 seconds.
Heat oil in a non-stick pan over medium heat. Drop batter onto skillet (approx 1/4 cup at a time). Sprinkle berries overtop of batter. Cook until bubbles appear on top. Flip cakes and cook until golden brown on underside..
If you want to make extra, these freeze well. They can be popped in the toaster to reheat.
