Tropical Shrimp with Coconut Rice Recipe

Coconut Rice:

2 tbsp coconut oil

3 shallots, thinly sliced

2 cloves garlic, minced

2 tbsp ginger, minced

1 cup brown rice

1 cup light coconut milk

1 cup water

1/4 tsp sea salt

2 tbsp fresh squeezed lime juice

2 tbsp fish sauce

1/4 tbsp raw Honey

1 lb jumbo shrimp, peeled and deveined

4 thick pineapple slices


In a pan melt the coconut oil over medium heat. Add shallots,garlic and ginger and cook until softened, stirring occasionally. Add rice and stir until lightly toasted. Approx 2minutes.

Stir in coconut milk, 1/2 cup water and sea salt. Bring to a boil then reduce to low, cover and simmer until rice is tender and all liquid is absorbed.

While rice is cooking combine lime juice, fish sauce and honey. Whisk together.

Place shrimp and pineapple on a greased grill on medium-high heat. Close the lid a grill for approx. 6 minutes turning once.

Grill until shrimp is cooked through and pink and pineapple is grill marked.

Serve shrimp and pineapple over cooked coconut rice.
