Spaghetti Squash Recipe

2 whole spaghetti squash

6 whole tomatoes

1lb lean ground turkey

2 tbsp extra virgin olive oil

2 cups Broccoli, chopped

1 sweet onion, chopped

1 red bell pepper, chopped

2 tbsp garlic, minced

2 tbsp fresh basil

2 tbsp fresh oregano

Sea salt and pepper, to taste


Preheat oven to 400F.

Slice squash in half and scoop out the seeds. Place face down on a baking sheet lined with foil and bake until soft.

Meanwhile, in a large pan, heat oil and garlic over medium heat and add ground turkey. Cook through.

Add tomatoes, veggies and spices. Cover and bring to a boil then reduce to low and simmer for 15 minutes.

Once Squash is baked remove it from the oven. Scrape out the insides and top with the turkey mixture.
