Salmon Salad

Salmon Salad Recipe

Serves 4

Ingredients

2 (5oz) cans salmon

6 cups mixed green

1 avocado, diced

1 pink grapefruit, sectioned

4 slices red onion

1 cup canned beets,  -or- 2 medium fresh beets, drained and diced

20 pistachio nuts, shelled and chopped

 

Dressing:

2 Tbsp extra-virgin olive oil

4 Tbsp fresh orange juice

4 tsp white wine vinegar

 

1 tsp orange zest

1 tsp Dijon mustard

1 large pinch chili powder

dash of Sea salt, to taste

Directions

Combine all dressing ingredients in a blender or food processor, or whisk together until smooth.

In a large bowl, combine salmon, lettuce, avocado, grapefruit, onion, and beets. Toss well with dressing.

Sprinkle with pistachios.
