1 ripe avocado
Zest of 1 lemon
Juice of 1 lemon
1 Tbsp fresh parsley
1 Tbsp extra virgin olive oil, divided
Pinch, sea salt
8 cherry tomatoes
2 slices sprouted grain or gluten free bread
Scoop avocado into a bowl and mash it up with a fork. Season with half the lemon zest and juice, parsley, 1/2 the olive oil and a pinch of sea salt.
Halve the tomatoes and use the remaining lemon zest and juice, oil and sea salt to season.
Toast the bread. Scoop the avocado mixture on top of the toast and save with seasoned tomatoes on top.
