2 tbsp extra virgin olive oil
1 egg + 3 egg whites
1 15oz can black beans, drained & rinsed
flesh of 1 avocado
1/4 cup salsa
Sea salt & pepper, to taste
Heat olive oil in a small skillet over medium heat. Whisk together egg + whites and add to skillet. Stir eggs until cooked.
Add black beans to skillet and cook for 1-2 more minutes until heated through.
Transfer egg and beans to a serving dish and top with sliced avocado and salsa. Season with salt and black pepper to taste.
